Healthy Recipes to Light up Diwali Night

Like every other festival in India, Diwali features an abundance of food. Diwali is a time for feasting, with mouthwatering snacks and delectable sweets. But we're here to tell you to celebrate Diwali in a health-conscious manner. The recipes below are all quite healthy and simple to prepare. So you can enjoy this Diwali with these delicious homemade easy and healthy dishes.

Hara bhara kabab

Hara bhara kabab are popular North Indian snack patties that are packed with leafy greens and vegetables. The term hara bhara kabab refers to green-filled kababs. These veg kababs are loaded with healthy and nutritious greens, as the name implies.

Method of preparation:

1.    Fill a large pot with water and add 120 grams of palak (around 3½ and 4 cups). Rinse.

2.    Boil 300 grams of potatoes until they are just cooked—not mushy—and fork-tender. Cook them in a pressure cooker for three to four whistles. After cooling, peel them.

3.    Fill a pan with 1 teaspoon of oil. Fry ¾ inch ginger (chopped) and 1 to 3 green chilies for 30 seconds.

4.    Add a cup of green peas. For 4 to 5 minutes, saute on a medium-high flame until soft and tender.

5.    Add the spinach and cook over a medium-high heat until the leaves are fully wilted.

6.    Cool these completely.

7.    Add the half cup of chopped coriander leaves and all the sauteed ingredients to a grinder jar, and grind everything into a paste.

8.    Now, for making the dough, crumble the potatoes in the mixing bowl. Transfer the spinach peas puree. Make sure the potatoes are totally cool. Then add the following:

·         ¾ teaspoon garam masala

·         ½ to ¾ teaspoon salt

·         ½ to ¾ teaspoon salt

9.    Add 2 tablespoons of roasted gram flour (sattu or roasted besan). Also add ¼ cup bread crumbs or poha powder.

10.  Combine all the ingredients to form a fairly stiff, non-sticky dough. Otherwise, the insides of the kababs will become soft and mushy. Add additional bread crumbs or poha powder to make the patties crispier.

11.  Separate the dough into 10 equally sized pieces. Roll them into 2½ to 3-inch kabab balls. Join the edges if you notice any cracks. Keep them on a plate.

12.  Now, lining the frying pan with Asahi Kasei Frying Pan Foil would be a healthier alternative to using oil. Due to the silicone coating on the foil, the kababs won't stick, negating the need for oil.

13.  Gently flip them over and cook the other side after they have been roasted until golden and crisp on the bottom.

14.  Serve with a sauce or yoghurt coriander chutney.

 

Chakli

Chakli is one of the primary snacks that is associated with Diwali. Deep-fried chaklis should be avoided if you're trying to lose weight, but you don't have to give them up completely. Chaklis can always be made in a healthier form. Try this recipe for wholesome, oil-free chaklis and enjoy it!

Ingredients

·         Rice flour – 1 cup

·         Low-fat curd – 1/2 cup

·         Sesame seeds – 2 tsp

·         Chilli powder – 1 tsp

·         A pinch of asafoetida

·         Salt to taste

·         How to Make

Method:

1.    Combine all the ingredients to form a semi-soft dough in a large bowl.

2.    Line a frying pan with the Asahi Kasei Frying Pan Foil.

3.    In a chakli press, press out round swirls or spiral shapes on the foil with the kneaded dough.

4.    Then cook these chaklis for 20-25 minutes, or until golden brown.

5.    Let the chaklis cool and snack on with a cup of tea.

 

Fruit Salad

Ingredients

·         ⅔ cup fresh orange juice

·         ⅓ cup fresh lemon juice

·         ⅓ cup packed brown sugar

·         ½ teaspoon grated orange zest

·         ½ teaspoon grated lemon zest

·         1 teaspoon vanilla extract

·         2 cups cubed fresh pineapple

·         2 cups strawberries, hulled and sliced

·         3 kiwi fruit, peeled and sliced

·         3 bananas, sliced

·         2 oranges, peeled and sectioned

·         1 cup seedless grapes

·         2 cups blueberries

Directions

1.    In a saucepan over medium-high heat, bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil. Reduce heat to medium-low, and simmer for 5 minutes or until slightly thickened. Add vanilla extract after removing from the heat. Allow to cool.

2.    Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Over the fruit, pour the cooled sauce. Cover and refrigerate for 3 to 4 hours before serving.
